Turkey Polpettone with Marinara Sauce

Well you have to admit that saying Polpettone is a lot more fun that saying Meatloaf.  And seeing as this recipe is not an ordinary meatloaf it deserves the title “Polpettone”!  I adapted this recipe from a sandwich I once saw Michael Chiarello prepare.  I have made the sandwich many times but I wanted to fancy it up a bit for Sunday dinner so I added a few things and turned it into a Polpettone.  Ground meat is one of my least favorite cuts of meat (if you can call it a cut).  You will hardly ever see me using ground meat unless I am making meatballs.  But this turkey polpettone has a texture unlike a burger or beef meatloaf.  It is light and silky.  Along with the flavors of the sage and lemon, it’s a masterpiece!  I am sure once you try this you will make it again.
Ingredients:
2 pounds ground turkey
2 slices of soft fresh bread crumbled
2 egg yolks
4 tablespoons thinly sliced green onion
1 tablespoon chopped fresh sage leaves
1 teaspoon Worcestershire sauce
1 tablespoon grated lemon zest
6 ounces whole-milk mozzarella cheese cut into 1 inch cubes
1 jar of your favorite marinara or see recipe for easy Homemade Marinara
1 bag baby leaf spinach 
Salt and Pepper to taste

Pre-Heat Oven to 350°
Directions:
Put the turkey in a bowl.  Add the bread crumbs, egg yolks, onion, sage, Worchester, and lemon zest and mix them in by hand very gently.  Do not over mix the turkey mixture; the less you handle it the lighter it is.

Add the cubed mozzarella, salt and pepper and again, with your hand, gently combine it into the mixture.

Form a “loaf” with the turkey mixture on a baking sheet or a 13 x 9” cake pan.  If using the cake pan do not spread it out to fit the pan, again form a “loaf” with it.

Bake for 45 minutes then remove the pan from the oven and put the spinach around the turkey loaf and spoon some of the marinara sauce over the loaf and spinach.  Place it back in the oven for another 15 minutes or until internal temperature is 165°.  Let rest 7 minutes before slicing.

Even your pickiest eaters I think will enjoy this.  They may even look at you and tell you that it is Mangialicious!
