Lemon Kale Wrap

Kale Wrap
Laura and I recently made our way down to Greenville, South Carolina to visit family.  After strolling around in the beautiful downtown area on an extremely hot day (anything above 75° is sweltering to me), we figured we would seek out a nice old fashion Italian deli to have lunch.  "Google", "nice Italian market with sandwiches".  We were directed to a Sicilian grocery & deli called Cianciola's.  It was a small grocery with a deli counter in the back and a nice upstairs lounge to enjoy our sandwiches that we would have made for us while we shopped.  Did I mention SC is way too hot for me to enjoy walking all over for too long?   By the time we made it to this cute old fashion deli, I was suffering from heat exhaustion and did not want too much to eat.  There were a lot of nice looking meats back behind that counter.  But I noticed lighter fare written on a white board atop of the counter that sounded perfect for such a hot summer day.  "Kale Wrap dressed with Lemon".  I was so glad I ordered that, as it quickly became my new favorite addiction!  It was a eh um... party, yes, party in my mouth.  Sweet, nutty, lemony kale!  I had to try and recreate this as soon as I got back home to my comfort zone.  I went out and bought all the ingredients the first day home and have made this my daily lunch special for weeks now.  I made a tray for my co-workers at the office and had my mother over for lunch, and I have them all hooked as well.  Make it!  You will have never expected kale to taste so mangialicious!
Ingredients:

1 10" wrap (white or wheat)
1 1/2 cups cut kale
1 tbsp lemon juice
1 tsp olive oil 
pinch of black pepper
1tbsp slivered almonds
1tbsp dried cranberries
1tbsp dried blueberries
3 or 4 grape tomatoes
shredded mild Gouda cheese (about 1/4 cup)

Directions: 

I like to use a bag of cut and cleaned kale and remove the big stems.  Take a big handful of kale (cup and a half) and place kale in a bowl to be lightly dressed with lemon and olive oil.  I then squeeze lemon juice into a small bowl and add a bit of olive oil.

Whisk the two together and pour onto the kale and hit it with a dash or two of black pepper.  Toss the kale to evenly coat.  Place the lemon kale onto a 10" wrap, toward one side (closest to you).  Next, sprinkle about a tablespoon of dried blueberries, a tablespoon of dried cranberries and a tablespoon of slivered almonds onto the kale.  Next, slice 3 or 4 grape tomatoes in half and place them evenly across your pile of kale.  Add some shredded Gouda (to your liking) along the length of the kale wrap.  Gouda cheese adds a nice mild nutty flavor.

 Now time to roll it up, keeping the ends folded inward as you go.   It is a perfectly light, lemony, nutty summer meal and it is a quick, mangialicious way to eat some very healthy kale! You will love, love, love this wrap, even if you don't think you could ever love kale.

This is also an incredibly portable lunch, easy to take outdoors to the backyard or to the office or in a picnic basket!
